CS CHERRY SORBET

Our Cherry Sorbet is a celebration of simplicity and technique, allowing the natural intensity of ripe cherries to take centre stage. Crafted in-house, the sorbet is delicately balanced for a smooth, light texture and a clean, lingering finish.
Pure, vibrant and irresistibly refreshing!
INGREDIENTS
1 kg fresh cherries – puréed
125 g liquid glucose
190 g caster sugar
6 g xanthan gum
5 g salt
700 g water
METHOD
– In a bowl, combine the caster sugar and xanthan gum. Mix well and set aside.
– In a saucepan, add the water, liquid glucose and salt. Bring gently to a simmer over medium heat, stirring to dissolve.
– Slowly whisk the sugar and xanthan mixture into the simmering liquid. Continue whisking and cook until the mixture reaches 80°C and thickens slightly.
– Pour the hot mixture over the cherry purée and whisk until smooth and fully combined.
– Cover and refrigerate the mixture overnight to mature. This allows the flavours to develop and improves the sorbet’s texture.
– Churn the chilled mixture in an ice cream machine according to the manufacturer’s instructions until smooth and frozen.
– Serve immediately, or store in the freezer until ready to enjoy.
Best enjoyed with fresh cherries and a light zest of lemon!
