Jan’s unique fusion of innovation, creative flair and sound business nous has been a driving force of success for Cafe Sydney and its team for over 24 years.
Executive Chef, Sarahjane Brown brings a bold mix of expertise and creativity, redefining our classic menu with a modern edge that highlights the freshest seasonal ingredients. Originally from the UK, she honed her craft in some of London’s most renowned fine dining kitchens. With a passion for sourcing the finest produce and celebrating the stories behind it, Sarahjane has cultivated a network of top-tier suppliers nationwide.
Director of Operations, Alex Bolam joined Cafe Sydney in 2019, bringing refined hospitality expertise and a passion for food, beverage, and service.
Driven by a love for people, service, and food and beverage, Alex’s commitment to excellence and continuous learning ensures the seamless delivery of an exceptional dining experience.
Head Sommelier, Franck Goze joined the Cafe Sydney wine team in 2022 bringing an incredible breadth of experience working in Michelin starred restaurants across the globe. Franck has ensured Cafe Sydney maintains the three-glass rating it has held for many years.

Natural light, inviting dark timber, metalwork and floor-to-ceiling glass doors celebrate Cafe Sydney’s breathtaking views of Sydney harbour. Original interior designed in 1999 by Hong Kong based John Morford complements the heritage of Customs House.

Recycled black butt timber flooring has been sourced from other demolished historical buildings in Sydney. Artist Angus McDonald’s specially commissioned paintings of the Harbour Bridge adorn the main restaurant, together with our enchanting photo series by the late David Moore.
The Lounge enriched and invigorates the restaurant perfectly, blending classic furnishings and sleek modern design, with rich, earthy tones and natural textures. A large dramatic mirror wall, created by light artist Bruce Ramus transforms with shimmer, colour and shape.
In 2019, Collins and Turner redesigned Cafe Sydney’s private dining room and cocktail bar area. Responding to and celebrating the timeless design, while remaining respectful to the DNA of John Morford’s original design. They have created a unique room with warmth and visual texture, ensuring a magical view of Sydney Harbour.
