Our wonderful executive chef, Matt Bates and his kitchen team have spent the last few weeks testing the delicious products and flavours of Winter ready for our new seasonal menu, available from Wednesday 28 April.
Whilst we farewell the fig with a heavy heart we are reveling in the delights that are currently running hot and seasonal at the food markets. In a world where seasonality can sometimes be blurred, it is always comforting to return to what is truly local and available now including artichokes, broad beans, mushrooms, celeriac, cabbage and fennel.
We previewed loveliness in so many dishes that we are bursting for you to taste them too - here's a snapshot of what is on offer:
- Jerusalem artichoke, chestnut and duck confit soup
- Slow braised veal shank, bone marrow and horserasish with roasted baby vegetables
- Queensland prawns with broad beans, zucchini, lemon and a light bisque sauce
- Spatchcock with chestnut mushrooms, cavolo nero
- Jewfish with clams, mussels with delicate fennel and parsley broth
- Grilled swordfish with cassoulet, fennel cream and brown butter
